Cajun Fried Crawfish (Cajun Popcorn)

 
1 lb. crawfish tails
 
Batter Mix
1/4 cup evaporated milk
2 eggs
2 tablespoons vinegar
1/2 teaspoon red pepper
 
Flour Mix
2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon red pepper
     

Mix batter ingredients in one bowl, and flour mix ingredients in another bowl.  Dip crawfish tails in batter.  Remove and drop in flour mixture.  Drop in hot oil (380) and cook until light golden brown.  Serve while hot.
