Crawfish Puree' Broccoli Casserole

 

 

 

1 stick of margarine
1 onion chopped
1 bell pepper chopped
2 stalks of celery chopped
1 can of cream of broccoli
16 oz. Crawfish Puree'
16 oz. Velveeta cheese
1 pkg. chopped broccoli thawed
3 cups long grain cooked rice
Salt and pepper to taste
Italian bread crumbs
Onion tops optional
13x9 greased baking dish or pan
   

Saute vegetables in margarine for 10 minutes on medium heat.  Add Cream of broccoli, blend well.  Add Crawfish Puree' blend in well.  Season to taste.  Add cheese, blend till melted.  Add broccoli, stir.  Add cooked rice, mix well.  Pour into baking pan.  Top with bread crumbs and onion tops.  Bake for 15 to 20 minutes in a 350 degree oven.
