Crawfish Puree' Spinach Stuffing

 

 

1 T. Butter
1 T. Flour
1 C. chopped Onions
1 pkg. frozen Spinach
1/4 t. Lemon juice
1/4 t. Nutmeg
1/4 t. Worcestershire sauce
8 oz. Crawfish Puree'
1 C. Italian Cheese (White)
Seasoning to taste
4 Catfish Fillets
   

Saute' onions in butter.  Add spinach and mix well.  Add lemon juice, nutmeg, Worcestershire sauce, and flour.  Mix well.  Add crawfish Puree' and mix.  Add seasoning to taste.  Add cheese and stir well.

Season Catfish fillets and stuff with crawfish stuffing.  Garnish.  Bake 20 to 30 min.
